Peppered Top Sirloin Steak in Bourbon Sauce

Bourbon Sauce

Serving Size: 4

Ingredients
4 8-ounce top sirloin steaks
3 tablespoons fresh ground black pepper
kosher salt, to taste
3 tablespoons olive oil
3 tablespoons unsalted butter
3 green onions, finely chopped
1/3 cup bourbon
1 cup low-sodium beef base
1/2 cup heavy whipping cream

Directions
1. Season both sides of steak with pepper and salt.
2. In large skillet heat olive oil over high heat. Place steaks in hot oil, cook for 2-3 minutes each side then remove and set aside.
3. Add green onions to skillet, saute for 2 minutes. Pour bourbon in, simmer for 2 minutes. Pour in beef base, continue to simmer for 2 minutes. Stir in cream and butter.
4. Once mixture begins to thicken it’s ready to be poured over sirloin steaks and served.
5. Serve with smashed potatoes.
